This special hon mirin, called Shirataki, is made by Gyokusen, a Japanese sake brewery located in Gifu prefecture. What sets their hon mirin apart from other authentic Japanese hon mirin is the fact that they use their own homemade shochu when making this hon mirin.

Shochu is an indispensible ingredient for preparing mirin, along with good quality rice (Yamada Nishiki 75% polished glutinous rice and Takayama 82% polished mochi rice), and rice koji (malted rice). Gyokusen, which is a sake brewery that believes in sticking to traditional Japanese brewing methods, allows their mirin to slowly naturally age for 3 years before bottling it for production.

In turn, a hon mirin that has a soft sweetness, elegant mellowness, and deep, dark brown color is born. The natural process of aging the mirin allows Gyokusen to not have to add any sugars or amino acids to reach an ideal hon mirin product. The dark brown color is also proof that the mirin has been naturally aged!

This hon mirin has a genuine taste and natural sweetness than cannot be found in chemically aged mirin products. In fact, this mirin has such a pure rice flavor that it can also be enjoyed as a beverage if you wish.

Use this hon mirin when making simmered dishes, soups, stews, sauces, or anything you'd like! It works exceptionally well when making glazes such as teriyaki.

Also suitable for making jam. By using mirin, the final flavor will more elevated than jam made with sugar. You can use this mirin when making any type of jam. In addition, mirin is excellent in removing any unwanted odors from meat or seafood during cooking.
